Easy Bruchetta

What you'll need:
2 lbs. Roma tomatoes 
25 Basil leaves
2 Garlic cloves
Splash of olive oil
1 lbs. Fresh mozarella
Salt & pepper to taste
French Baguette


Dice tomatoes, put in large mixing bowl



Dice basil, add to tomatoes



Add 2 garlic cloves, use garlic press
Dice fresh mozarella, combine with mixture
Add a splash of olive oil

Salt and pepper to taste, mix well


Slice french baguette
When you're ready to serve, toast or grill bread



Bruchetta is a lovely appetizer, or as a side to your favorite Italian dishes.
You can also add bruchetta to cooked pasta for a tasty meal.

Noah's Bagel's - Burbank



Today I lunched at Noah's Bagels in Burbank.  I usually have breakfast when I go to Noah's; they have great bagels and shmears, egg mits, breakfast panini's etc.  (My favorite is the Peppercorn Potato bagel with Sun Dried Tomato Shmear.)  I've had lunch there a few times, but today I was in lunch heaven.


I had the Grilled Chicken Panini: Grilled chicken breast, pepperoni, spinach, roasted red peppers, pesto, mozzarella & provolone cheese grilled on ciabatta bread.  Yuu-uuu-uuum.  Served with a deli pickle and a side of your choice: Fruit salad, potato salad or coleslaw.



I was completely stuffed, but my buddy Matt got their delicious Chocolate Chip Coffee Cake.


This was by far my favorite lunch at Noah's thus far.  Don't worry, I went jogging after work.
